Bulk find and replace

Renaming a vendor across hundreds of rows used to mean filter + manual edit, ten minutes per rename.

Now: Cmd/Ctrl+H opens a find-and-replace dialog. Regex toggle, case-sensitive toggle. When a filter is active, a sheet-scoped replace only touches visible rows. Undo collapses the whole replace into one action.
